While Googling the brew pressure profile, I found this and I am intrigued! It is interesting to see how that barista uses a concave piece to level the ground. If I was doing it, I would level the grounds in a circular motion.

It is kinda neat. I was told the shots were lukewarm which it is understandable because it is hard to keep the temperature up with that little body of water.
