Food Pairing: Cappuccino & Food.

Continuing from my previous post about Food Pairing: Coffee & Desserts, this time is about cappuccino and food. No! No! No! I am not talking about those 12oz, 16oz, or 20oz extra foamy lattes. Without getting too specific, the traditional cappuccino is served in a 4.75 ~ 6.5 oz ceramic cup, and by the definition of 1/3 espresso, 1/3 steamed milk, and 1/3 foam.

In September Fresh Cup Magazine, it pointed out, “throughout Italy, a cup of cappuccino is usually accompanied by what Italians call a brioche.” Also in the article, some coffee pros share their favorite food with their daily cappuccino such as a chocolate-filled pastry, a small piece of single original chocolate and a chocolate espresso soufflé.

I like my cappuccino (Intelligentsa's Black Cat Espresso Blend) with a couple of chocolate Milano cookies or a slice of the cinnamon swirl bread or a double chocolate donut from Dunkin' Donuts.

I wonder where in Italy there were and how often they were served a brioche. We were often served a little cookie, or a little array of micro-snackables. Anything more and you could just buy from the loaded cases (as you've seen).

Robin and I like having a pirruline(sp?) (wafer-stick-w/chocolate inside) with our afternoon cappas. You have to be careful though, sweetness knocks the sweetness out of the drink and then makes it seem two dimensional and I don't really like that. Pairing is a delicate thing, that's for sure.

Hey Andy!

According to the person who wrote this article, she mentioned Balzer in Bergamo, which was named one of the top café by “Il Gambero Rosso”. The other one is Gran Caffe Cimmino La Terrazza in Naples.

I totally agree with you, the taste preference is subjective. I am glad that you left a comment, because I didn’t want to write an elaborate entry, afraid that people would simply get bored before reaching the end of my post. I can discuss or correct myself here in the comment box.

I also concur that the food should not overpower the cappuccino. Cappuccino is the focal point, while the food should be complementary.
